Baking Bonanza

With the new Peter Bradley Adams album blasting and a pleasant 72 degree breeze coming through the windows, I spent the morning filling my apartment with the smell of baked goods. I am on a conquest to find the perfect cookie, thus I take every opportunity to whip up a batch from my Baking Docket. I find baking very therapeutic. I love the measuring and shaping and smelling. And while tasting a small bite of my creations is fun, I’d rather fatten up my loved ones and enjoy their reactions. I’ve learned that ingredients really do need to be at room temperature, you really do need to sift the dry ingredients together and overworking the dough really does ruin the cookie. I followed all the rules and was rewarded with THE BEST COOKIE: Peanut Butter Cookies with Raspberry Jam. My favorite food transformed into a pillowy, crackly, peanut buttery cookie. Giada, you never let me down.

Next up was my attempt at a fat-free granola bar from the Brown Eyed Baker blog. The jury is still out on how I feel about these bars. I didn’t taste the finished product so my mother will be the ultimate judge. I feel as though fat-free and baking should never be used in the same sentence; however these looked and smelled good so I’ll be interested to hear what she thinks. With only 6 ingredients, oats, walnuts, raisins, honey, unsweetened applesauce and cinnamon, these are rather healthy. And should be great fuel for our Emerald Bay hike on Friday!
